2019 Kistler Chardonnay, Les Noisetiers
This chardonnay combines three of Sonoma Coast sites (Vine Hill Vineyard, Dutton Ranch, and Trenton Roadhouse) offering a complex smoky aroma of perfectly ripe fruit with delicious “hazelnut” notes, crafted in true Bourgogne style, its crisp acidity highlights the perfect balance of fruit, minerality, and oak. The result is one of the most luxurious and complex white wines made in this county, delivering a rich texture and a long, lingering finish rare in New World Chardonnay.
2016 Barnett Cabernet, Spring Mountain District, Napa Valley
This Cabernet Sauvignon blend delivers Bordeaux style complexity in true Napa Style; its deep purple and Blueberry Pie aromatics reveal hints of cloves and black plum right out of the glass. Poised with anise, cedar, and black pepper, the velvety mouthfeel is complemented by a range of dark berry fruit, pepper spice, and cocoa. Delightfully balanced, the tannins divulge chalky notes without overwhelming the senses. The Spring Mountain District acidity is definitely present, balancing tannins and texture while uplifting the palate and pairing perfectly with our Prime Rib.
2016 Silver Oak, Cabernet Sauvignon, Napa Valley
Rendering deep ruby colors and true to its Napa Valley roots, the 2016 Silver Oak Cabernet Sauvignon delivers opulence with hints of cassis, ripe raspberry, toasted coconut, and shiitake mushroom. This Cabernet delivers richness from the first sip, depth through the mid-palate, and great structure without being heavy leaving you with an exceptionally long finish. Fresh cherry flavors balanced with floral notes and a subtle hint of black pepper add a beautiful complexity. This is, without a doubt, a perfect companion to our Prime Rib.
